About me

My research interest is in functional foods, especially upcycling food industry by-products to use in the development of functional food and enhanced-function packaging. I work with small food manufacturers to add value to local fresh produce and increase market access. Recent work also includes the recovery of bioactive compounds from food industry waste streams for food applications.
